Drawing inspiration from his travels Fidel creates a cuisine that he likes to refer to as Progressive Mexican. Within a year of opening, Corima was awarded a Michelin star, named one of Bon Appetit's Best New Restaurants of 2024, and was nominated for a James Beard Award in 2025. Most recently, Corima was named #36 on the Worlds 50 Best by San Pellegrino.
